    Camper Cookin' Recipes: Sriracha Maple Chicken Kebabs

    Thanks for checking out our new segment! Here we are going to highlight some unique and delicious recipes that will help even the most inexperienced cook keep mealtime fresh on the campsite. If we can cook ‘em, you definitely can. 

     

    We all love a good burger and dog cookout, but sometimes you want to spice it up. With more advanced kitchen features on our Jayco, Venture, and Forest River campers, cooking while in the great outdoors has never been easier. The whole party will be looking forward to dinner time when you’re at the grill. 

     

    So, fire up your campers Outdoor Kitchen or your Blackstone and let’s get cookin’! 

     

     

    Sriracha Maple Chicken Kebabs 

     

    This recipe is SWEET and SPICY and so easy to make! And with only a couple of ingredients, you won’t have to worry about lugging your whole kitchen with you. This recipe yields approximately 6 servings 

    Here’s what you’ll need: 

     

     

    Here’s how to do it: 

    • 2 large chicken breasts 

    • 1/4 cup soy sauce 

    • 1/4 cup maple syrup 

    • 1 tbsp sriracha sauce 

    • 1 pineapple cubed 

    • 1 bell pepper cubed

    2. 1. Cut your chicken breast into medium-sized cubes. 

    When you’re cutting your chicken up, you’ll want to keep a couple things in mind. You want to make sure that your chicken is cubed small enough to be about “bite-sized” while still being big enough to be properly skewered on your kabab. When in doubt here, I would lean on the side of pieces that are a little big. It can always be eaten in two bites and if it's too small it will be hard to skewer at all. 

     

    1. 2. Place cubed chicken breasts in a large resealable plastic bag. 

     

    1. 3. Whisk together soy sauce, maple syrup, and sriracha sauce. 

     

    1. 4. Pour over the top of the chicken and massage into the chicken. 

     

    1. 5. Marinate for at least 15 minutes to 24 hours in the fridge. 

    The marinating process is super important. A bare minimum of 15 minutes is enough to keep your chicken tender and delicious but if you really want to maximize flavor, it is best to let it marinate in the fridge overnight. This really locks in that flavor and will keep your chicken juicy when cooked. 

     

    1. 6. Cube your bell pepper and pineapple. 

    Same thing applies here as with the chicken. You’re going to want to make sure that your fruit and veggie cubes are small enough to eat, but big enough to be skewered properly. 

     

    1. 7. Once the chicken is done marinating, soak wooden skewers in water for 10 minutes. 

    Don’t skip this step! Doing this will keep your skewers from burning up on the hot grill. We want cooked food, not kindling! 

     

    1. 8. Skewer the chicken pieces, red bell pepper, and pineapple pieces on to the wooden skewer. 

    Fill ‘em up however much you want, but make sure not to overpack the skewer. This can cause the food to cook unevenly. Plus, you’ve got to have somewhere to hold the skewer while youre eating! 

     

    1. 9. Grill chicken until thoroughly cooked through, rotating skewers occasionally. About 10 minutes. 

     

    1. 10. Serve and enjoy!
